Thiebou Diene
Thiebou Diene (Ceebu Jën) is Senegal’s national dish and the heart of Senegalese home cooking. Its name means “rice and fish” in Wolof, but the dish is much more than that. It begins with fresh whole fish traditionally stuffed with a fragrant herb and garlic paste (rof) slowly simmered in a rich tomato-based broth infused with onions, garlic, parsley, and warm West African spices. Large seasonal vegetables such as carrot, cassava, cabbage, eggplant are gently cooked in the same pot, allowing every ingredient to absorb deep, savory flavor.
